Empanada de pimientos, berenjena y tomates secos



Últimamente le estoy cogiendo el gustillo a esto de preparar empanadas. Y ya que encontré algunos de los ingredientes, que creía imposibles de localizar en la isla, me animé con esta receta.

Ingredientes:
* 2 láminas de hojaldre u hojaldre en rollo, o como en mi caso en polvo. Lo amasas con agua y harina ( casi que lo prefiero al de rollo, las láminas ya me he dado por vencida de poder encontrarlas, porque se conserva mejor y no necesariamente en nevera)
* 1 berenjena
* Pimiento rojo ( yo usé también uno naranja porque me hizo mucha gracia, nunca lo había visto)
* Tomates secos ( mi tesoro...jeje)
* Queso de cabra
* 1 cucharada de tomate frito
* Anchoas
* Sal

Preparación:
- Extendemos y amasamos una lámina de hojaldre del tamaño de la bandeja para horno que vayamos a utilizar.
- Cortamos los ingredientes en cubitos (pimientos y berenjena) y los doramos un poquito en la sartén. Añadimos tomate frito y salamos al gusto.
- Mientras tanto ponemos a hidratar los tomates, si no vinieran ya hidratados ( yo compré unos que venían en aceite).
- Una vez listo, colocamos sobre el hojaldre los ingredientes, añadimos los tomates secos y ponemos por encima el queso de cabra.
- Cerramos con otra lámina de hojaldre a modo de empanada y horneamos a 180º durante unos 30 minutos aproximadamente. O hasta que veáis que el hojaldre ya está dorado.
- Decoramos con unas anchoas por encima y listo para servir!!!
La empanada de por sí ya está buena puesto que todos los ingredientes lo están, pero la combinación del tomate seco y el queso de cabra es espectacular! No os lo perdáis!


Pie of peppers, aubergine and dried tomatoes
Lately I’m getting use to prepare pies. Because of I found some ingredients that I thought were impossible to find in this island, I dared myself with this recipe.
Ingredients:
* 2 puff pastry sheets or rolls or like in my case, powder puff pastry ( I prefer this one more than others because it is better to keep it and has no needs of refrigeration, and also It was being impossible to find puff pastry sheets, so I gave up)
* 1 aubergine
* Red pepper ( I used an orange pepper because I had never seen one before)
* Dried tomatoes ( my treasure ..:-P )
* Goat cheese
* 1 tablespoon of tomato sauce
* Anchovies
* Salt
Preparation:
- Prepare the puff pastry as a sheet shape with the right size of your baking tray.
- Cut the ingredients into little pieces (peppers and aubergine) and put them in a pan. Add tomato sauce and a pinch of salt.
- Meanwhile, put the tomatoes in a bowl with cold water if they need it. ( I bought dried tomatoes conserved in oil)
- When they are ready, place the ingredients over the puff pastry sheet. Add some tomatoes and sprinkle goat cheese to taste.
-  Close with another puff pastry sheet as a pie shape and put it in the oven. Bake at 180ºC for about 30 minutes or until the pastry is golden.
- Put some anchovies on the top as a garnish and serve it!

The pie itself it’s already good because all the ingredients are good, but the combination of dried tomatoes and goat cheese is just spectacular!! Do not miss it!!
