Quiche Lorraine



 

Hoy os traigo la más famosa de las quiches. Originaria de la región francesa de Lorena, la Quiche Lorraine es conocida por su sabroso relleno. Se utiliza masa quebrada para la base, la podéis comprar ya hecha, pero yo he preferido hacerla, no es muy complicado y se nota la diferencia en el sabor.
Ingredientes:
Para la base:
 * 225gr de harina
* 150gr de mantequilla
* 1 huevo
 Para el relleno:
 * 75gr de bacon
* 75gr de queso cheddar
* 3 huevos
* 280ml de nata para cocinar
* Sal y pimienta
* Nuez moscada
Preparación:
- Tamizamos la harina en un cuenco y la mezclamos con la mantequilla cortada a daditos. Amasamos con las manos hasta que tenga una apariencia similar a miguitas de pan.
- Añadimos el huevo batido y mezclamos bien hasta obtener una masa suave y que no se pegue en las manos. Formamos una bola, la envolvemos en papel film y la metemos en la nevera unos 20 minutos.
- Estiramos la masa con un rodillo hasta que tenga un grosor de medio centímetro aproximadamente.
- Ajustamos la masa en el molde. La pinchamos por todas partes con un tenedor para que no se formen burbujas de aire. Cubrimos con papel de horno y colocamos unas legumbres secas para que hagan peso y la masa no suba. Lo ponemos en horno precalentado a 190ºC durante 15 minutos.
- Retiramos el papel con las legumbres y pintamos la masa con huevo batido. La volvemos a introducir en el horno 5 minutos para que se selle.
- Ahora ya tenemos nuestra masa quebrada y podemos rellenarla.
- Reducimos la temperatura del horno a 150ºC.
- Freimos el bacon cortado a tiritas. Retiramos el exceso de aceite y lo esparcimos, junto con el queso chedar cortado a taquitos, sobre la base.
- Mezclamos los huevos con la nata. Sazonamos con sal y pimienta y vertemos la mezcla sobre la base. Espolvoreamos con una pizca de nuez moscada y horneamos durante 30 minutos.
En casa ha gustado mucho, de hecho ha volado en un santiamén!. Ya estoy pensando en otros rellenos para otra ocasión. Espero que os guste!

Today I bring you the most famous quiche. Originated from the French region of Lorena, the Quiche Lorraine is well- known for its tasty filling. Is common to use shortbread pastry for the bottom, you can buy it ready-made, but I’ve preferred to prepare it by myself, it isn’t so much complicated and you can notice the difference in its flavor.

Ingredients:

* 225gr of flour
* 150gr of butter
* 1 egg
 For the filling:
* 75gr of bacon
* 75gr of cheddar cheese
* 3 eggs
* 280ml of cooking cream
* Salt and pepper
* Ground nutmeg

Preparation:

- Mix the flour with butter previously cut into dices. Knead it with your hands until the mixture seems breadcrumbs.
- Add a beaten egg and mix all together until the dough doesn’t stick in our hands. Make a ball shape, wrap it with film paper and put in the fridge for 20 minutes.
- Spread the dough with a roller in a sheet shape of 0,5 cm thick.
- Place the dough in a mold. Prick all over with a fork in order to not create air bubbles. Cover it with baking paper and put some dried beans so that will avoid the dough rises.
- Put in the oven previously preheated at 190ºC for 15 minutes.
- Remove beans and the baking paper; paint the dough with a beaten egg. Put again in the oven for 5 minutes.
- Reduce the temperature of the oven to 150ºC
- Cut bacon into little strips and fry. Remove the excess of oil and place it in the base. Cut cheddar cheese into pieces and sprinkle over.
- Mix eggs with cream, salt and pepper. Add the mixture to the base, sprinkle nutmeg and put in the oven for 30 minutes.

They liked it very much at home so it disappeared in seconds! I’m thinking already in other types of filling for next occasions. I hope you like it!
